Chicken mince – 400 gm
Ginger garlic – 1 tbsp
Onion – 1 (chopped)
Cashew nuts (ground) – 2 tbsp
Salt – 1 tsp
White pepper – ½ tsp
Black pepper – ½ tsp
Green chili (ground) – 1 tsp
Roasted & crushed cumin – 1 tsp
Crushed coriander – 1 tsp
Chopped coriander – 2 tbsp
Corn flour – 1 tbsp (heaped)
Allspice (garam masala) – 1 tsp
Bread (soaked in milk) – 1 large slice
Tomatoes – 4 (chopped or blended)
Onion – 1 cup (chopped)
Ginger garlic – 1 tsp (heaped)
Green chilies – 2 (chopped)
Ginger (julienne cut) – 2 tbsp
Salt – 1 tsp
Red chili powder – 1 tsp
Oil – ¼ cup
Coriander leaves – 2 tbsp
Allspice – ½ tsp
Orange food color – a pinch
Directions
In a chopper, combine chicken mince with all the listed kebab ingredients.
Mix or chopperize until smooth.
Grease your hands and shape the mixture into long kebabs.
Pan fry the kebabs until golden brown.
Give them a dum of coal (smoke with burning coal for 2–3 minutes) for a smoky flavor.
Heat oil in a wok (karahi).
Add chopped onions and fry until light golden.
Add ginger garlic paste, salt, and red chili powder; sauté for a minute.
Add chopped or blended tomatoes and cook until the oil separates.
Add the fried kebabs to the masala.
Mix gently, then add chopped green chilies and ginger julienne.
Cover and cook on dum (low flame) for 10 minutes.
Sprinkle allspice and orange color, mix lightly.
