150 g mutton (minced)
100 g chicken (minced)
2 tsp ginger-garlic paste
1 tsp onion paste
1 tsp red chilli powder
1 tsp coriander powder
1 tsp cumin powder
¾ tsp black pepper (powdered)
1 tsp dried mango powder (amchur)
¼ tsp dry ginger powder (saunth)
2 tsp oil (plus extra for basting)
1½ tbsp cashew paste
1½ tbsp cream
2 tbsp gram flour (besan)
1 egg yolk
Salt to taste
Fresh coriander leaves (for garnish)
Onion rings and lemon wedges (for serving)
Directions
In a large bowl, combine the mutton mince and chicken mince. Mix well using your hands.
Add the ginger-garlic paste, onion paste, red chilli powder, coriander powder, cumin powder, pepper, dried mango powder, saunth, oil, cashew paste, and cream. Mix thoroughly.
Add besan and egg yolk to help bind the mixture. Combine everything well.
Season with salt to taste, mix again, cover, and refrigerate for 1 hour.
Shape the mixture onto oiled skewers and grill or roast until evenly browned on the outside. Baste frequently with oil while cooking.
