Ingredients

  • 150 g mutton (minced)

  • 100 g chicken (minced)

  • 2 tsp ginger-garlic paste

  • 1 tsp onion paste

  • 1 tsp red chilli powder

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • ¾ tsp black pepper (powdered)

  • 1 tsp dried mango powder (amchur)

  • ¼ tsp dry ginger powder (saunth)

  • 2 tsp oil (plus extra for basting)

  • 1½ tbsp cashew paste

  • 1½ tbsp cream

  • 2 tbsp gram flour (besan)

  • 1 egg yolk

  • Salt to taste

  • Fresh coriander leaves (for garnish)

  • Onion rings and lemon wedges (for serving)

Directions

  • In a large bowl, combine the mutton mince and chicken mince. Mix well using your hands.

  • Add the ginger-garlic paste, onion paste, red chilli powder, coriander powder, cumin powder, pepper, dried mango powder, saunth, oil, cashew paste, and cream. Mix thoroughly.

  • Add besan and egg yolk to help bind the mixture. Combine everything well.

  • Season with salt to taste, mix again, cover, and refrigerate for 1 hour.
